Sweet Potato Soup


Saturday off happy days! So today I am going to have a nice dinner party at Fabrizio’s house!  On the menu quinoa mint and walnut salad, lasagna with roasted butternut squash, peppers and blue cheese, and finally a dark chocolate and halva cheese cake! Well I better getting started on the dinner! In the meantime this is what I will have for lunch a simple but absolutely delicious Sweet Potato Soup with homemade flat bread best served with some nice cheese selection ;-p

 Shopping List
For the soup
500 g of sweet potato
100 g of potato
100 g of white onion
50 g of celery
1 clove of garlic
1 fresh chili
5 g of curry powder
5 g of turmeric powder
5 g of cumin powder
1 vegetable stock cube
Salt & Pepper t.t

For the bread
70 g of self raising white flour
30 g of whole meal brown flour
5 g of salt
Cold Water

Let’s get on with this
1.       In a pot slightly fry the onion, garlic and chili, then add the sweet and non potatoes, the celery and the spices, fry for another minutes then add the water (I don’t really put too much water as I like my soup to be very creamy), the stock cube and cook until the veg are tender
2.       In a bowl mix the flour and the salt, I generally add some mixed herbs too, then add the water until you get a quite liquid mixture
3.       In a frying pan put some oil and then add the bread mixture and cook it until brown
4.       Blend the soup and maybe cut some cheese and … enjoy
