Lime and Coconut Pie


Finally a day off and full of cooking of course! But I did something very good woke up at 8 o’clock and went to college for the first time after a month, well was the last class after all!



I feel a bit sentimental now, well maybe is the pressure of growing up…!! Ah as Magda said today …”I am not ready to grow up yet” indeed just because four years of college passed that does not mean that you need to man up, work on your career and plan a family and so on! The only thing I have on my agenda is to go to New Zealand! So today I had my best cirle of friends over for dinner and I made this pie ;-) and this is the song of the day…

Shopping list

Pastry
200 g of all purpose flour
125 g of butter
60 ml cold water (approximately)
1 tablespoon of sugar
Pinch of salt


The Inside
200 g of creamed coconut
10 leaves of mint
2 lime zests
2 tablespoon of sugar (one tablespoon of algavre nectar)
1 egg


Let’s get on with this
  1. Put the flour and the salt in a large bowl and then add the cubes of butter
  2. Use your fingertips to rub the butter into the flour
  3. Then add enough of the cold water to bind the dough together
  4. Wrap the dough in cling foil and let it chill into the fridge for 10-15 minutes before using
  5. In a bowl break 200g of pure creamed coconut, add 450 ml of warm water, stir until dissolved  
  6. Then add the zests and the mint leaves the sugar and egg
  7. Roll the pastry and put into a buttered tray then add the coconut mixture
  8. Cook for 20-30 minutes at 180°

Yes... uhmmm is the right sound
