Rainy Day Tart




Woke up this morning looked outside of the window and though, I shall stay in bed … the weather is absolutely dreadful for this reason, as I am a bit of a FB addict, not as much as many people I know of, but more than others, I decided to update my status with: 


Then, I made a coffee and decided to do some Cheap Food Pornography. Of course while trying to cut last night cake, I chopped half of my finger off, but that’s just me!Then I made a tea while listening to:


Rainy Day Tunes!  I consumed more than half of the cake in the meantime! I really don’t like not to have Magda around when I am baking desserts because then I need to eat them all on my own! So the story of this cake, I of course wanted to do something completely different, but while shopping like crazy I forgot to buy the main ingredients, so I improvised this Tart 


Shopping Lists

Pastry
250 g all purpose flour
150 g sugar
150 g butter (This is the original recipe, now I only put 25 gr. of butter for 400gr. of flour , but that’s not a real pastry so, please follow this recipe)
80 ml of cold water (approximately)
1 egg
1 teaspoon of ground cinnamon
1 pinch of salt
Lemon zest

Filling
200 gr. of almond powder
450 gr. Condensate Milk /One Can (I used the Light version)

Let’s get on with this
  1. Put the flour, salt, sugar, cinnamon in a large bowl and then add the cubes of butter and the zest
  2. Use your fingertips to rub the butter into the flour and then add the egg
  3. Then add enough of the cold water to bind the dough together
  4. Wrap the dough in cling foil and let it chill into the fridge for 10-15 minutes before using
  5. In a bowl mix the almond powder with the condensate milk
  6. Roll the pastry and place it into a baking tray and add the almond mixture
  7. Cook for 20 minutes at 180°



Happy days, have a cup of tea and enjoy this cake, and forget about the dreadful weather
