Nowadays I
have this crush on dates based desserts, since I have made that gluten free
cheese cake. Dates are absolutely amazing as soon as you work them with your
hands they become a soft base that you can shape as you like! So today I made
this lovely ice-cream sandwiches…they were so good and very easy to make too!
Ingredients
For the dough
250 g of
dates
50 g of mix
dry fruits
50 g of
salted peanuts
20 g of cocoa powder
30 g of demerara sugar
Water
For the ice-cream
350 g of
light condensate milk
200 g of
natural Greek yogurt
20 g of espresso powder
Lets get on with this
- In a bowl mix all the ingredient for the ice-cream leave it into the freezer for at least 3 hours
- In a separate bowl mix the cocoa powder with a bit of water
- In another bowl crush the peanuts then add the dates, the dry fruit and the sugar and the liquid chocolate and mix it until you get a sticky paste
- Roll the paste and cut it into regular disks using a whine glass or whatever you have at home
- Then fill the disks with ice-cream and place them in the freezer for another hour
Oh yes, they are yummy and fairly healty
