Mexican Mash


I am sitting in my leaving/kitchen drinking wine waiting to some sort of inspiration to get up and make myself as presentable as possible (though job) and hit the pub...My friends just came up with the best line of the day “Do not judge the milk from the tetra pack” referred to a guy I used to fancy! Early today we went roll skating in Phoenix park...some good it was, we managed not to injure any kind including our self, since we bought professional rollerblades without breaks and believe me we are far from professional! Anyway when we came back we decided to have a look at http://foodgawker.com  and check for some recipes with potatoes and I found this nice and appealing Peruvian potato, crab and avocado dish,from http://tanglednoodle.blogspot.com/2009/05/causa-for-celebration.html.
I am vegetarian so I decided to make my own Mexican version with red lentils chilli con carne...as Joy from friends says in the episode in which Rachel makes a slightly revised version of the English Truffle  ...Goood

Shopping lists
For 4 people
For the chilli con carne
2 medium size red onions
1 clove of garlic
150 gr. of red lentils
2 medium hot fresh chillis
250 gr. of tomatoes sauce (I always use passata...I love passata)
250 gr. of canned kidney beans
100 gr. of grated mature cheddar
Salt t.t
Chilli powder
Cumin powder

For the Guacamole
1 lime
1 red onion
1 clove of garlic
2 medium size avocados
Chilli pepper
Salt t.t

For the mash
7 medium size potatoes
Fresh coriander
Salt and pepper t.t

Let's get on with this
  1. First step boil the lentils until soft
  2. In a pan put a bit of olive oil and fry the onion garlic and chillis and then add the beans, the lentils and pure over the passata and let it cook for a while like 15 minutes
  3. In the meantime boil the potatoes and then mash them and season to taste
  4. Now put the avocado, onion, garlic, lime juice and add salt to task and mix it until you get a nice and smooth cream
  5. Now the fun part in a ramekin or in a tray build up your layers, as you prefer I did the following: a layer of mash, guacamole, mash, chilli con carne, cheese, mash more cheese

I know it does not look so appealing in the pics...but try it out is very good
