Matranga Pancake

Don Matranga Pancake
Today is pancake Tuesday, so I decided to use, my dear friend Matranga’s pancake recipes. Matranga one morning woke me up, very much excited about having made pancake with yogurt instead of milk. I think he did genuinely though he was the only one to have come up with this idea! Obviously he wasn’t, but it was a Sunday morning and I decided to hide the upsetting truth.  Anyway Matranga was so thrilled that after few days we discover pancake leftovers on our kitchen curtains, you know he was flipping away!

Here is the recipe for the perfect Don Matranga pancake!

Shopping List
2 eggs
500 gr. of low fat yogurt
150 gr. of flour
½  teaspoon of baking soda
1 clove of garlic
½ medium size onion
50 gr. of feta cheese
6 sundried tomatoes
6 olives
10 leaves of basil
Salt & peppers t.t

Let’s get on with it
1. Mix mix baking soda, flour, sugar, and salt in a bowl and then add the yogurt
2. Wisk away until you obtain a smooth batter
3. Place some oil in the pan and slightly fry onion and garlic and add the sundried tomatoes, olives and feta 
4. Now pure over the batter
5. Let it cook and flipped like Matranga does…carful to sofa, curtains and the alike add basil
